11-04-2009 Haarlem, easter rabbit

Ole bought a rabbit and we baked it in red whine, with a lot of herbs. It came out perfect, gentle and lovely ;-)


Red Rabbit recipe:

1 rabbit (or a few legs)
4 garlic pieces
4 red unions
4 celery pieces
4 tomatoes
salt, pepper, mustard
thyme, rosemary and parsley

Cut them in rough pieces, and mix it with pepper, salt and lots of thyme and rosemary.
Put the rabbit with vegetables and herbs in a Roman Pot (romertopf). Pour red wine over, as good as you can get it, about 1 glass.

Put it in an hot air oven, 185 Celsius for 75 minutes. Take it out, sprinkle olive oil over the red rabbit and put it back again for 15 minutes.

Before serving, top it off with some parsley and mustard. Bon App�tit!
